Wheat Fruit and Nut Muffins
1 Cup stone-ground whole wheat flour
1 Cup unbleached white flour
1/2 to 2/3 c. sugar
1 T. baking powder
1/2 tsp. salt
1/4 cup powdered milk
1/4 cup rolled oats
1/4 cup wheat germ
1/2 cup chopped nuts
1/2 cup chopped dates or raisins
1 cup chopped apples
1 cup milk
1 egg
1/4 cup oil
Combine dry ingredients, fruit and nuts.
Beat together the milk, egg and oil, and fold into dry ingredients only until blended.
Fill oiled muffin cups almost to top, and bake 45 minutes in 350 degree oven.
Makes 12 large muffins which improve when frozen and reheated.
